not the prettiest looking dinner huh? that was my exact thought when i opened the lid of the crockpot. just a pile of beige. not so appetizing.
but believe me, don’t let the yucky appearance of this dish keep you from trying it out. this recipe for pork chops and potatoes in mushroom sauce is simple, easy, and definitely delicious!
all it is, is sliced potatoes and onions, boneless pork chops, with a sauce made of condensed cream of mushroom soup, chicken broth and a variety of herbs including sage, rosemary, and thyme. just throw everything in a crockpot, set it and forget about it. okay not really, there are a couple more steps involved but i promise it is easy.
start by seasoning the pork chops with a little seasoned salt and then brown the pork chops in a large pan. you don’t need to worry about cooking the chops all the way through since they will continue cooking in the crockpot. but you do want to make sure to get some nice color on them.
then make the sauce, by combining the cream of mushroom soup, chicken broth, herbs, dijon mustard, salt and pepper in the crockpot.
now pile on the onions and potatoes…
and mix it all together.
place the pork chops on top of the potatoes and onions.
then set the crockpot to low and cook for 4-6 hours.
and it’s done! enjoy the super flavorful potatoes that have soaked up all of the scrumptious mushroom sauce and the amazingly fork tender pork chops. yum!
