do you like how i’m still posting about holiday gifts and it’s almost mid-january? fail. haha. but that’s how crazy this winter/holiday season has been and unfortunately, i just didn’t have enough hours in the day to post about the different recipes i tried out this past month for holiday gifts. but this is the last one. i promise.
i made almond joy chocolate lollipops. they are just like the pistachio cranberry white chocolate lollipops, but with all of the flavors of an almond joy candy bar – chocolate, coconut and almonds.
the process is exactly the same as the white chocolate lollipops so check out that post for step by step instructions and they turn out like this…
i just think these chocolate lollipops are so fun! they are simple to make but they are really good and the flavor combinations are endless!
so to recap, here’s what i included in some of my holiday gifts this year…
when i come up with my list of cookies and treats to put in the holiday gifts, i try to make sure to have a good variety of flavors. i wouldn’t want to give something away that has all chocolate treats or all fruity treats. that’s how i decided on this combination of treats – a few chocolate desserts, some caramels, something with peppermint flavor, and a spice cookie. i think this is a good rule of thumb when putting together any kind of dessert table, baked good gift basket, etc.
and sorry these posts are so late – i totally know it’s after the holidays and you don’t really need any more holiday gift ideas. but i think these could be great for other holidays throughout the year or even birthdays or just because gifts. plus homemade gifts are so fun to give away – i love that they are personal and meaningful. oh and i always give away my baked goods in plastic containers. even though it’s not the fanciest or prettiest, i like how they are practical and then my friends and family can just reuse them. actually when one of my friends got his holiday gift, he was more excited for the containers than the treats inside. haha. but hope everyone liked their holiday gifts!
Almond Joy Chocolate Lollipops
adapted from Ina Garten
- 8 oz semi-sweet chocolate
- 1/4 cup almonds
- 1/4 cup shredded sweetened coconut
- Place a sheet of non-stick silicone or parchment paper on a sheet pan.
- Place 6 ounces of the semi-sweet chocolate in a heat-proof glass bowl and put it in the microwave on high for 30 seconds. Stir the chocolate with a rubber spatula, return it to the microwave for another 30 seconds, then stir again. Continue to heat and stir in 30-second intervals until the chocolate is just melted.
- Immediately stir in the remaining 2 ounces of chocolate and allow it to sit at room temperature, stirring often, until it’s completely smooth. (If you need to heat it a little more, place it in the microwave for another 15 seconds.)
- Using a tablespoon, pour the melted chocolate in rounds onto the silicone and place lollipop sticks in the middle of each chocolate round, giving the stick a little twist.
- Sprinkle the tops of the lollipops evenly with the almonds and coconut
- Set aside to harden.
Yield: 12-13 lollipops
