after making brownie stuffed chocolate chip cookies, i couldn’t wait to try out other kinds of stuffed chocolate chip cookies. after a long day cleaning the apartment, i made oreo stuffed chocolate chip cookies. oh my goodness! a cookie in a cookie. absolute craziness! they are really big and truly decadent – half the cookie was more than enough for me. still i think they are an excellent special treat!

these popsicle cocktails or “poptails” are inspired from a few different places. i first got the idea of making poptails from a beautiful blog, bakers royale. she makes all kinds of awesome desserts but i was especially intrigued by her poptail recipes like lychee saketini poptails, white sangia poptails, and cantaloupe and kiwi daiquiris. don’t they all sound amazing!
a couple nights ago i wanted to try my hand at making some poptails but i didn’t have any of the ingredients listed in any of the poptail recipes on bakers royale so i decided to come up with my own based on what i had in my pantry. the first thing that caught my eye was a can of lychee. we eat a lot of fresh lychee at home but i can only get them canned here on the mainland.
they are delicious and definitely one of my favorite fruits. it is also one of my favorite shave ice flavors. now if you haven’t had shave ice i definitely suggest trying some. it’s not at all like a snow cone (which sadly is all you can get on the mainland). the ice is actually shaved not crushed so the shave ice is light and fluffy. amazing! here’s a picture of me and my best friend saskia when we were home in this past winter enjoying our shave ice. :-)
when i get shave ice i usually get cream topping on it. it’s pretty much sweetened condensed milk, kind of watered down and it just takes the shave ice to a whole other level. oh my goodness, i want to go home and have some shave ice now. back to the poptails, this was my inspiration for these poptails. i made lychee and cream poptails. it’s a combination of 2 of bakers royale’s recipes and it’s made with lychee, yogurt, and melon flavored rum (that’s just what i happened to have on hand but definitely feel free to use any kind of regular or flavored rum).
i think they turned out pretty good if i do say so myself. haha. they aren’t too sweet and had the perfect amount of lychee flavor. plus on a long hot workday, instead of just having a cocktail it was great to have an ice cold poptail and relax. enjoy!
